Grilled Skirt Steak

Tonights dinner was a skirt steak marinated in a honey teriyaki sauce. Again cutting corners I used a pre made marinade... No energy as everyone else wanted tacos for dinner, and we have a cast iron grill that needed to be used

You will need:
- 1 package skirt or flank steak (I always buy the smallest one as I'm the only one who really likes steak at my house)
- 1/2 cup Kens Honey Teriyaki marinade
-1 one gallon plastic zip lock bag

To make:
1) Marinate steak 1 hour or longer (I try to go longer)
2) Heat grill so it's hot, NOT SMOKING, I always leave a window open or fan on close by
3) Put steak on and let sizzle away, do not move around! Flip after 5 minutes and do the same for the other side, until desired... I usually like mine well done, but for this I will accept medium well (20 mins in total flipping for grill marks)
4) Let your meat REST! Remove it from the hot pan and set it on a plate or cutting board for a few minutes so when you do cut into it you don't lose all the juices. When you do cut, cut on the angle (I didn't because i like it kind of stringy)

It was very tasty! makes great left overs!

Shrimp Fried Rice

Hey all! I made this quick and easy side dish for a Christmas party (serving 10ish people)... best part- it was quick and easy and not very costly!

You will need:
-2 1/2 cups instant white rice
-1 package steam fresh mixed veggies
-1 to 3 packages frozen salad shrimp (depending how much you like, and they are much cheaper than the big shrimps)
-1 bottle Kikoman low sodium stir fry sauce
-3 to 4 table spoons canola or vegetable oil (for frying)

To Make:
1) Cook instant rice according to packaging and let cool (otherwise it will be to wet and sticky, but resembles same taste if in a time crunch)
2) Microwave frozen vegetables for 2 minutes
3) Heat oil in large nonstick skillet and add rice, veggies and shrimp, cook until fully heated, stirring frequently
4) Add entire bottle of stir fry sauce, it gives color and adds a better flavor then just soy sauce, cook for another 5 or so minutes

This is the simple thrown together version, you can always add an egg or two if you like that in your fried rice, you can also sub chicken or more veggies for the shrimp. My kids love this simple recipe and we make it frequently! All together costing about $10, very budget friendly!

Michelle's bacon-wrapped-cream cheese-toast

Last year for Christmas I remembered my Aunt Michelle making the most delicious appetizer! Not only was I going to make it, but I made it for breakfast, all of us snacked on it throughout the day!

YUMMM! Mouth watering!

You will need:
-Baking sheet
-1LB Bacon (we use Oscar Mayer Center Cut)
-1 Brick of plain cream cheese (NO LOW FAT!!!)
-1 Loaf of white bread (we use the cheap stuff for this)
-Toothpicks

How to Prepare:
1) Preheat oven to 400
2) Cut crust off bread and cut each slice into two equal pieces (rectangle pieces no triangles)
3) Smear softened cream cheese on bread (like you would with butter), and roll your bread like a sleeping bag
4) Cut bacon strips in half and wrap around bread like a blanket to keep it snug (make sure it overlaps)
5) Stick toothpick through overlapped bacon and out the other end
6) Bake 15-20 minutes or until bacon is fully cooked

This is no diet recipe and the clean up is super easy... Why, you may ask... because all the bacon grease is soaked up into the bread and the cream cheese slowly melts leaving the bread crispy and the cream cheese warm and melty..

Quick BBQ Sausage Pizza

It's not necessarily the prettiest picture, as I'm feeling a bit under the weather tonight :( However it is a huge hit at my house!

You will need:
-1 can Pillsbury Pizza Crust
-BBQ Sauce (as much as you like, we don't like it too saucy)
-2 handfulls Mozzarella Cheese
-1/2 cup chopped yellow or sweet onions
-1/2 cup chopped green bell peppers
-1 package Hillshire Farm Keilbasa, or Smoked Sausage (I also use Turkey Keilbasa or Turkey Sausage) chopped into equal sized pieces
-Baking sheet
-Medium Skillet

To Make:
1) Preheat oven to 400
2) In skillet combine peppers, onions, and sausage, cook until desired texture... we like ours a little more cooked so the sausage gets a little crunch to it.
3) Spread pizza dough over a baking sheet, and poke holes to prevent bubbles from forming
4) Bake for 10 minutes or until crust is mostly cooked (it won't have the wet look anymore) and will start to fluff up
4) Spread BBQ sauce over cooked dough and sprinkle one handful of cheese. Top with sausage peppers and onion mixture and with the remainder of the cheese.
5) Put pizza back in the oven for 5-10 minutes or until golden brown
6) LET COOL!!! Nothing worse that having that HOT barbecue sauce burn your mouth!

This recipe is also good with chicken!
